Switzerland’s Säntis 6 year Snow White No 8 Pineau 48%

Switzerland is known for many things – gorgeous mountains and lakes, chocolate and cheese, watches and banking… but whisky? That isn’t exactly the first thing you think of… in fact, just 25 years ago it wasn’t even legal! However, like many parts of the world, Switzerland is now very much in the whisky-making game.

My first brush was the Old Bear from Langatun Distillery – courtesy of a recommendation from the good folks at The Whisky Exchange in London. It was smoky and certainly left an impression.

Next up was a random selection from a spirits shop in Munich on a trip, before there was even a possibility of moving to Germany. In this case, it was the surprisingly accessible Forty-Three Swiss Highland Single Malt Whisky.

Fast forward a few years and I found myself living in Nurnberg, Germany. And three years ago, in December 2020, there was a mini from Säntis in an Advent Kalendar I tackled as a pre-Christmas project.  In this case, it was the Säntis Malt Himmelberg Edition 43%. I have to admit, it didn’t exactly impress. Why? In part because it reminded me of drinking a Radler – a sweet lemony beer – more than whisky!

So when a Säntis was recommended for our European whisky session in December 2023, I decided to keep an open mind. I have learned one should not judge a distillery solely based on one experience alone.

What did we think?

Säntis No. 8 Snow White 6-year Pineau 48%

  • Nose – At first it was just a hit of alcohol, then sweetened into candy, a bit nutty, plum skins, curiously it reminded me more of schnapps than whisky!
  • Palate – A bit aggressive and prickly, past the pepper were wine tannins, shifting from plum skin to grape, very dry and a mixed red fruit jam (the kind that doesn’t have a distinguishable type of berry or fruit), lemon-lime soda (or dare I say? Radler!), maybe joined by some cherry?
  • Finish – It was like it was impersonating a sherry finish but wasn’t quite able to pull it off, some generic cola

We really didn’t mean to be uncharitable, however descriptions like “headache-inducing” and “one flavour blob” were bantered about. We generally agreed that the nose outperformed the palate and finish. And if anything, it had a schnapps-like quality – depending on your opinion of schnapps, this could be a good or not-so-good thing.

Our discussion turned to the many distilleries around Germany and Switzerland that started off brewing beer or distilling schnapps, and then veered into the whisky business. Using stills meant more for distilling fruit than malted barley mash does lead to some curious results. I confessed how my original impression of German whiskies was direct to the point of being a bit harsh, lacking nuance and complexity. Until I discovered St Kilian and Aureum and a few notable others, which both show a different, much more interesting range and style.

But back to the Säntis, our whisky contributor shared the story of the Lochar distillery’s Swiss “whisky trek“…. starting with one inn, there are now some 26 barrels found at different hiking locations around Switzerland. Each barrel is slightly different, thanks to the differing maturing conditions such as altitude or barrels.

She found the boxed set with two nosing glasses – available online for around Eur 72. What more do we know? It was initially aged for 5.5 years in small beer barrels of the Appenzeller Brewery Locher before being finished for 8 months in ex-Pineau des Charentes casks from France.

It was a bit of a disappointment, however, we then thought to put it into context. If we spent a day trekking in the alps, the crisp cool air, coming in from such exertions, would this do the trick? Perhaps. And context is everything! So let us be more charitable and go back to the glorious views, cheese fondus, and chocolate… In my case, a memory of a couple of days in Weggis earlier this summer, including a boat trip on Lake Lucerne for a fabulous meal with great company.

Finch Schwabian Whisky – An Exploration of 8 Expressions

Welcome to the Schwabian Alps! My explorations of German distilleries continue with Finch distillery… For those not familiar, the Schwabian Apls are found to the east of the Black Forrest, north of the Bavarian Alps, the Swabian Alps (Schwäbische Alb in German) are sometimes overlooked.

“Ulm, where the Danube swiftly flows, forms the boundary in the south, while the Neckar runs past half-timbered towns, limestone crags, beech woods, juniper-cloaked heaths, hilltop ducal castles, and robber-knight ruins further north.” (Lonely Planet)

As for Finch distillery, like several continental European distilleries, there is quite a lot of experimentation with various grains and casks. And what better way to explore these possibilities than with a set of miniatures – from barley to a variety of relatively obscure kinds of wheat to rye. As for casks? A mix of red wine, port, sherry and American Oak. 

In this case, the set was a compact gift-wrapped treat!

So what is contained in this Finch octet tasting set?

  • Finch Fine Selection 6 year Single Malt 42%

So now… on to the most fun part – tasting!

Where to start? We initially opened the 1st listed on the guide – the Emmer Edition 3 Cask Strength – however, we realised immediately the folly of this approach and switched instead to the Finch Single Malt. 

Finch Fine Selection 6 year Single Malt 42% (est. Eur 40 for 500ml)

The folks at Finch share that the barley for this Single Malt comes from their own cultivation, matured in a combination of ex-bourbon and wine casks.

  • Nose – Initially quite fruity, then rubber took over – as in really quite rubbery – like childhood-flavoured erasers. As it settled in the glass, the aroma became sweeter with cereals. Over time it also shifted into roasted barley with honey, some green apples or green grapes
  • Palate – The first sip was a bit brash, full of hay sweetness, waxy chocolate, more of the cereals
  • Finish – Reminded us more of a simple single grain than single malt – there for but a moment and then disappeared

Overall this wasn’t the best beginning. It was compared with a breakfast cereal – Smacks – made of puffed wheat and honey. Whilst nothing was “off”, we just weren’t yet excited. 


Finch Cask Strength 8 year Emmer Edition 3, Re Wine Barrels 54.6% (est. Eur 59 for 500ml)

Next up, we returned to the cask strength we initially cracked open. Rather than barley, this whisky uses a grain – black emmer – from the Finch farm on the plateau of the Swabian Alb. What is Emmer you may ask? Otherwise known as Triticum decoction is a plant species from the wheat genus. It is one of the oldest cultivated grains, yet hardly grown today. This type of wheat with long-awned, usually two-flowered spikelets is hardly grown in Europe today – if it is, it is essentially black emmer.

  • Nose – Initially very shy, then spirity, slowly opening into marzipan, caramel, biscuits, hint of red wine or raisins
  • Palate – Started like a sour calvados, then from tart apples to pears, giving way to clear red wine influence
  • Finish – Light
  • Revisit – What a lovely perfume, silky smooth on the palate, closing with a light spice finish

Could clearly tell this is a grain rather than a single malt, yet we enjoyed it much more than the 6 year Single Malt expression. Whilst it came across as young, once the nose opened up, it was quite inviting…


Finch 8 year Dinkel Port 42% (est. Eur 49 for 500ml)

This expression uses another lesser-known grain for whiskies – spelt – this time, combined with an ex-Port cask.

  • Nose – The first whiff was very promising. Light yet very sweet. It was a bit like cotton candy or the powder on a marshmallow.
  • Palate – Sparkling grape juice, sweet spices, smooth and surprisingly light for a port-matured whisky.
  • Finish – Honey and raisins

Our overall impression was that it makes a nice starter whisky. The aromas were appealing and the palate enjoyable.


Finch Distillers Choice 8 year Red Wine Barrique Cask 42% (est. Eur 49 for 500ml)

We now shifted into “weizen und gersten”, in other words – wheat and barley, matured in a Red Wine Barrique.

  • Nose – Oh nice! Juicy red berries. black forest cake
  • Palate – Very light, sweet, red cherries and a touch of chocolate
  • Finish – Light

Again, like the others, it comes across as young and spirity. Then once it settles in, quite pleasant. What we would consider an ‘entry-level’ whisky – an interesting way to introduce folks new to whisky. Whilst not complex, it has enough interesting going on to engage.


Finch Special Edition 8 year W.O.A. Bullhead Single Malt 46% (est. Eur 49 for 500ml)

For those not familiar, W.O.A. is Wacken Open Air – a massive heavy metal music festival in northern Germany. This particular expression was made for this festival – matured in three casks: American oak, Port and red wine.

  • Nose – Wood, honey, bourbon-like, lots of vanilla, fruity and sweet, pleasant
  • Palate – Hmm.. a bit peculiar and confused. It had a bit of a grain or bourbon bite with wine. There were different elements – each on their own interesting yet somehow didn’t come together harmoniously.
  • Finish – Unremarkable

Our discussion centered around the festival and the conclusion this could be a great festival drinking whisky. On its own, in a festival setting, the combination of elements would just join the cacophony of pounding Heavy Metal music. But in comparison with the other Finch whiskies sampled that cool late November evening? Alas, it fell a bit short.


Finch Distillers Choice 8 year Single Malt Sherry Cask 46%  (est. Eur 59 for 500ml)

Next up was a shift into a more classically styled single malt. No rare grains or cask experimentations here. Just barley, and an ex-sherry cask – back to the basics.

  • Nose – Our first impression was – this is no heavy sherry, yet still unmistakable. Raisins, creamy sweet spices, cracked black peppercorn
  • Palate – Thick and creamy, sweet with more of those raisins and spice, 
  • Finish – Spicy yet still light

This one simply goes down exceedingly easily. A solid package. For one of us – it was the clear favourite of the evening!


Finch Special Grain 6 year Rye 2nd Edition 46% (est. Eur 49 for 500ml)

We then decided to shift into Rye, again from Schwabian rye, matured fully in red wine barrels.

  • Nose – Yup! This is definitely rye, yet also soft and sweet. Almond paste, marzipan 
  • Palate – Sweet nuts – like pecans, quite atypical
  • Finish – One of the few Finch finishes that stays – spirity, dry 

Rye but not a typical rye. Also quite different from the other Finch whiskies.  Perhaps this is the influence of the red wine cask?


Finch Distillers Choice 10 year Single Malt Smoky 46% (est. Eur 49 for 500ml)

We closed with the peaty expression. They share it is a combination of their local barley and oak smoked malt, then matured in wine barrels plus Islay barrels. 

  • Nose – Ashy, like cold coal, smoke…. after some time we could finally detect a few additional elements – a bit of caramel nuts, speck
  • Palate – Hmm… the tasting notes say marshmallows, but for us it was only the black ash of a burnt marshmallow. Burnt honey nut, burnt toast with a little bit of honey, very  dry, granite stone
  • Finish – The ash remains, with a hint of caramel

This was a total departure from all the others. The only consistency was that it also came across as youngish despite being matured for 10 years. Also, whilst ash was the single predominant feature, it wasn’t the forceful hit of a Smokehead, instead it was light ash. For us though, ash is ash and not our favoured type of peaty whisky.

Finch isn’t Scottish, it isn’t trying to be. Instead they are celebrating what is available locally for a range of experiments – some more appealing than others for us. The single malt and smoky were not our whisky style, however the Sherry, the Emmer and Dinkel Port stood out. Even the Rye, with its lighter touch, was interesting.

These aren’t the only Finch whiskies in my Germany Whisky Cabinet! I also have the following pair, ready and waiting for the right opportunity!

  • Finch 5-year Single Malt Sherry 42%
  • Finch 8-year “Barrel Proof” ex-Red wine, Bourbon, and Port Cask 54%

More Minis – Nc’Nean, Tipperary, Gulliver’s 47

Continuing my wee whisky mini explorations, I turned to a combination of two different sets… mixing up countries and styles!

For Nc’Nean, this mini came after I’d already purchased a full bottle with thoughts to bring it back to Mumbai for the Whisky Ladies. I knew it would be young but had been impressed with meeting the women leading the way with this fresh new independent distillery – committed to sustainable production, carbon-neutral, using recycled glass for the bottles, and most importantly passionate about crafting a fine dram in harmony with our planet.

Nc’Nean Single Scottish Malt Batch 7, 46%

  • Colour – Light gold
  • Nose – How delightfully fresh, fresh barley, light orange citrus
  • Palate – Initially prickly then gentled, quite young and active, some ginger, tinned pineapple, honey sweetness with something a bit rustic, tannins belying a wine cask influence? If yes, it was subtle and balanced
  • Finish – Waxy, a touch bitter like roasted nuts, light spice, a touch of orange oil

The challenge with tasting minis is that sometimes it simply isn’t enough! I was glad that I have a bottle to explore another time at leisure with friends.

I then shifted gears from Scotland to the Emerald Isles…

Tipperary 8 year Red Wine Cask Finish, Cask RC00117, 59.5%

  • Colour – What colour! A bright ruby
  • Nose – Bold blackberries, spice
  • Palate – Brash, a bit harsh and spicy, with some strong oak undertones, tannins and juicy red berries, like chewy red gummy bears
  • Finish – Sweet and tart at the same time, oak spice chasing

If Nc’Nean had a subtle hand, here there was no mistaking the use of a red wine cask with the Tipperary. So heavy, I wondered if it could have been finished in a decidedly “wet” cask leaving some wine behind? There is nothing shy about this whisky!

Whilst the Irish distillery is undisclosed, the folks at Tipperary have started their own distillery and in time will be putting out their own whisky. In the interim, this bottling of another is retailing for Eur 68.

And then on to a third country – England – with a lightly peated dram from The English Whisky Company:

Gulliver’s 47 Single English Malt 47%

  • Colour – Pale white gold, nearly translucent
  • Nose – Fresh sea breeze and smoke, angel food cake, citrus, layers of soft peat
  • Palate – Delightful! Gentle sweet peat, apples, buttery, lovely malty, most
  • Finish – Sweet tobacco leaf, lingering cinnamon

I really enjoyed this one – rolling around the palate – the peat was subtle yet satisfying. A rather nice dram.

What more do we know? It was aged in bourbon casks from Jim Bean, with the brand inspired by Samuel Gulliver an explorer who brought wines, spirits and liqueurs from around the world back to 18th century Britain. You can find this for Eur 60.

Paris Whisky Live 2022 – Lagg Masterclass

I’ve made no secret of my love affair with Arran whiskies – cemented by time spent on the Island visiting both the Lochranza and Lagg Distillery. So at Paris Whisky Live, I jumped on the opportunity to explore further…

Our guide was Mariella Romano, who joined the group in 2019, and the focus of the Masterclass was to introduce the new expressions from their Lowland Lagg Distillery.

So what did we try? A trio of 1st releases with:

  • Batch 1 – Lagg 3 year 1st Fill Bourbon Cask (Summer 2023) 50%
  • Batch 2 – Lagg 3 year (30 month ex-Bourbon, 6 months Olorosso) 2023 50%
  • Batch 3 – Lagg 3 year (30 month ex-Bourbon, 6 months Roja Red) 2023 50%

We began with the Lagg 3 year 1st Fill Bourbon Cask (Summer 2023) 50% 50 PPM

  • Nose – Herbal notes to start, young, fresh mash, clean and sweet with a grassy rather than medicinal peat, a hint of heather and puff of smoke
  • Palate – Very promising, creamy with a citrus zest
  • Finish – Nicely lingers, more so than I had expected from such a young dram

What we tried was literally bottled the week before! It then officially launched in France on Oct 1, 2022 (after Paris Whisky Live!) as an inaugural limited summer release. Mariella shared that they see their peat as more “Aberdeen west coast style”, gentler than the robust peat monsters some Islay distilleries produce.

She also shared how the idea for Lagg’s full focus on peat began with their experiemnt’s with their Lochranza distillery peat expressions – like Machrie Moor and their Cask Strength. Since deciding to set-up the Lagg distillery, they have stopped producing any new peat expressions at Lochranza.

Next up was the Lagg 3 year – 30 month ex-Bourbon, 6 month Olorosso finish (2023) 50% also 50 PPM.

  • Nose – Mmmmm a chocolaty sweet peat, richer than the 1st dram with loads of dark fruit sherry notes, raisins and sweet spices
  • Palate – Very smooth – the sherry finish works wonderfully with the peat
  • Finish – A lovely cinnamon finish

Delicious! In this case, it was initially matured in bourbon casks before being finished for an additional six months in 55 liter ex-Oloroso sherry casks for 6 months. Mariella also mentioned how they used Concerto barley and peat from the North East of Scotland.

She then shared a virtual tour of the new Lagg distiellery (after some small technical hiccups!). While many interesting stories were shared, one element was the contrast between the “mountain” pure water at Lochranza distillery and Lagg distillery’s use of a borehole with distinctly different taste. Another is how important it is to have the significantly expanded space for cask storage at the new facility.

Mariella also shared that while Lochranza (Arran) whiskies are sweet and easy drinking, the intent for Lagg is not just peat but also a deliberately ‘harsher’ quality.

And with that we moved on to the last whisky, closing with Lagg 3 year – 30 month ex-Bourbon, 6 months Rioja Red 2023 50%:

  • Nose – Dry nutty element, sweet cinnamon, a bit herbal
  • Palate – Curious character – some minerals? Also a bit fruity – mostly dark berries, some oak
  • Finish – Wine followed by a cinnamon finish like the Olorosso

The peat in this was quite subtle – and the ex-Rioja red wine Firkan was a bit curious – particularly on the palate. I wish I had tried this with a bit of water, as have a feeling this one needs to open up a bit to reveal its full character.

It was terrific to have a chance to explore these early Lagg expressions. I’m curious to see how they evolve in the coming years.

Time to explore a new Old Pulteney Pineau des Charentes 46%

We all have our favorites – particular distilleries that we are simply partial to… I’ll fully admit that Old Pulteney falls into this category for me! So when a “new” expression was released, I thought, why not?

New to the Old Pulteney range, this limited expression kicks off Old Pulteney’s new Coastal Series with plans to release new expressions each year – beginning with a no-age-statement finished in ex Pineau des Charentes wine casks.

I had originally intended to bring it from Deutschland to India, however, after an interesting tasting of several minis one May evening in Nurnberg, decided it would be nice to try an Old Pulteney! Happy I did….

Old Pulteney Coastal Series – Pineau des Charentes 46%

  • Nose – Yellow fruits, grassy meadow, warm honey, peach, soapy candle wax, tinned pineapple, and a bit of white wine spritzer
  • Palate – Also quite fruity, but then had a nice butter almond nuttiness, smooth with a piquant spice at the end… as it rolled around the palate, was even a hint of tobacco leaf
  • Finish – Slightly bitter, reminded of an Earl Grey tea

Not an everyday dram, but interesting. After the 1st tasting, I revisited it again a few weeks later… it grows on you however I have to admit I prefer the “classic” – give me an Old Pulteney 12 year or 17 year any day!

What do the folks at Old Pulteney have to say?

Old Pulteney Pineau des Charentes is a limited edition expression that has been created by firstly maturing in hand-selected American oak casks, before being transferred into ex-Pineau des Charentes casks, which have been handcrafted by using French oak.

Old Pulteney Pineau des Charentes offers a lighter, sweeter taste layered on the classic Old Pulteney base. The result is a beautiful sweetness that perfectly complements Old Pulteney’s signature salty flavour, delivering a wonderful dram.

And their official tasting notes?

  • Colour – Bronz with a pink hue
  • Nose – Fragrant and rich with honey sweetness and vanilla at the base. Intense fruitiness starts jammy and stewed and develops into candied oranges and sticky balsamic raisins. Hints of toasted spices and power pepper complete this stunning profile.
  • Taste – A lingering finish showcases notes of caramelized hazelnuts and ground spices, broadening in sweetness, and then drying ever so slowly towards a savoury finale of coastal minerality.

I purchased this bottle in November 2022 from WhskyFass for EUR 95.

St Kilian Tasting Set – December 2022

From St Kilian’s First Signature Edition, I’ve found these folks are on to something! What I really appreciate is how they openly share their experiments into crafting distinctive whisky!

Whilst we missed the original online tasting from December 2022, thanks to the good folks at St Kilian, 2 sets made it to my friends so that the three of us could explore together. And that’s exactly what we did one fine weekend, after a day of merriment at a Medieval fair.

The set was mostly peaty (white bottles) with three unpeated expressions (black bottles) from distinct series: Signature, Heavy Metal inspired Grave Digger, Core range (Classic & Peat), Hand-filled, and a complete experiment! None of their Bud Spencer or Terence Hill expressions were included – I still have these on my next “to try” list!

We decided to try the initial five, leaving the balance for another tasting. So, what was in the original line-up?

  1. St Kilian Buche Meets Zeder (2017 – 2022) 57.7%, 680 bottles – A curious combination of beech and cedar, we didn’t even take much in the way of tasting notes… sorry!
  2. St Kilian Classic – Mild & Fruity 3 year 46%Utterly delightful! I’d love to see St Kilian do more along these lines! Fruity, fun & fabulous!
  3. St Kilian Signature Edition ‘Twelve‘ (2017/18 – 2022) 50.8% – Another unpeated expression, worth trying!
  4. St Kilian Hand filled – Paelzer Eich ex Moscatel (2017 – 2022) 60.2% – An experiment
  5. St Kilian Grave Digger – Fields of Blood 47% – It almost felt like we were waiting for the ‘best for (nearly) last!’ When St Kilian does smoke this way, it’s my kind of peat!
  6. St Kilian Signature Edition ‘Thirteen‘ (2016/18/19 – 2022) 53.9%What a remarkable experience together with its deconstructed set!
  7. St Kilian Peated – Rich & Smoky 46% Tried another evening in Canada together with the ‘Thirteen’ 
  8. St Kilian Grave Digger – Berry Metal 40% (Liqueur) – Saved to bring to Canada… described as an incredibly potent berry wow! (with a “kick”) 

So, let’s get on with the tasting, shall we? St Kilian Buche Meets Zeder (2017-2022) 57.7%

We began with the special edition experiment! As most whisky drinkers would know, Oak is the only permitted wood to mature Scotch whiskies. However in Germany, where rules aren’t so strict, several distilleries have successfully experimented with chestnut. American distilleries too have played around with Chestnut, Applewood… even a Japanese whisky has experimented with cedar cask finishes.

Why mention this experimentation? Well, with St Kilian Buche Meets Zeder, we have a cask-strength peated whisky that plays around with a combination of beech and cedar wood!

What did we think? Well… to be honest we struggled a bit with this one:

  • Nose – Woah! A chemical factory, acetone, burnt rubber, an old musty wine cellar, cork
  • Palate – Reminded us of cedar resin, pine, aromatic oils, slight hint of citrus
  • Finish – Sticks in the back of the throat, like retsina
  • Water – Better. A bit sweeter, some sour apple sauce, cinnamon, and citrus battled with the curious cedar and something else!

Whilst I didn’t find the official tasting notes, was able to track down a few further details courtesy of Whisky.com. Namely, it is approx 4 years with a combination of Barrels 1571, 1572, 1573, 1574, producing 680 bottles, and is described as:

…the combination of beech and cedar wood gives this gently smoky single malt whiskey aromas of fresh pine needles, essential oils and freshly grated lemon zest.

Hmm… We found the peat impact to be quite “forceful” rather than “gentle” on the nose, however, would agree with the other elements. And like many things, an experiment could be wildly successful or it could go very wrong. In this case, we simply had to admit, it isn’t really our style… Do you really want pine needles and essential oils in your whisky? However, you don’t know til you try!

–++–++–++–++– St Kilian Classic Mild & Fruity 3 year 46% –++–++–++–++–

Up next is a new “standard” in their core range – to be regularly available. In terms of casks, they shared that:

70% were allowed to mature in different bourbon casks and 30% in Pedro Ximénez and Oloroso sherry casks. Together with Amarone casks, these are among the main types of casks at St. Kilian Distillers and thus guarantee long-term availability. “The 70:30 ratio of bourbon to sherry casks has turned out to be a wonderful mix for us and also offers a combination that which was previously missing from our portfolio,” says Mario Rudolf happily.

Certainly sounds promising… so what did we think?

MILD FRUITY FRONT 1

What a mixed bunch! Some we thoroughly enjoyed, some challenged us, but that’s what we love about St Kilian! They are always experimenting, always trying different combinations, and aren’t afraid to put out to the whisky world things that might make one wonder…

Starward Two-Fold Double Grain 40%

Australia deserves its reputation for fabulous wines and – yes – whisky! So why not combine? While Tasmania dominates, Starward prove you can be in Melbourne and deliver something worthy of attention with distinction – by consistently maturing their whisky in wine barrels.

So when this wee sample showed up as a “bonus” with a larger whisky order, I was delighted to have a chance to check out how this distillery has evolved.

Starward Two-Fold Double Grain 40%

  • Colour – Reddish copper, even a bit of sediment
  • Nose – Clear influence of the wine casks, rich dried berries, coffee toffee sweets, creamy vanilla
  • Palate – Sharp, intense, dark fruits and berries, dark chocolate, tannins
  • Finish – Spice, red wine, bitter close, lingers

It was a bit hard to imagine this was only 40%… the flavours were much sharper and more intense. Certainly young but interesting. A definite departure from a classic Scottish dram – a bit edgier and funkier, in a good way.

Starward Two Fold

What do the folks at Starward have to say?

Smooth, tropical, lightly spiced. 

An Australian double-grain whisky. For depth, we use malted barley, just like our Nova. For an aromatic, dry flavour, we use Australian wheat.

Lightly charred or steamed barrels. Sourced from Australian wineries that make great shiraz, cabernets and pinot noirs. Often filled fresh when the barrel is still wet with wine. We mature each whisky separately in Melbourne’s wildly varied climate, then deftly combine. Smooth as silk. Spiced vanilla, tropical fruits and cereal characters rounded with red apples and berries.

Here are their official tasting notes:

  • Nose / Bright red berries coated in buttery vanilla spice.
  • Palate / Imagine a smooth, rich caramel dessert balanced by tropical fruit.
  • Finish / Delicate and long. A delicious, dry finish from a faded sweetness.

They go on to add:

We carefully select barrels from vineyards making great Aussie reds like shiraz, cabernet and pinot noir. These give our new make spirit tasty fruit, caramel and spice notes. To keep as much of a fresh red wine flavour profile as possible, we source barrels from just a day’s drive away. We either lightly char or quickly blast barrels with steam. Many are still wet with wine when we fill them. Flavour obsessed as ever, we fill each barrel at a lower alcohol proof than is traditional. This means our whisky draws more lip-smacking red wine fruit characters and tannins.

Then, it’s time for Melbourne’s climate to shine. Or, rather, rain and shine in a wildly unpredictable way. Famed for its ‘four seasons in a day’, Melbourne’s fluctuating climate means Two-Fold extracts more flavour from the barrel in a much shorter time than is traditional. After just three years, both barley and wheat whiskies are ready to be expertly combined.

St Kilian Signature Edition ‘Nine’ 55.3%

I love being able to bring something new and different to our tasting groups in India. The delight of hunting down something that is both novel and worth the time spent considering its different dimensions. Now, a high-end mature Scottish malt and a young upstart from Deutschland cannot be compared, however, there are some very worthy experiments taking place in Europe these days! And St Kilian distillery from just outside Frankfurt is one to watch.

What did we try?

St Kilian Signature Edition “Nine” 55.3%

  • Nose – Young, malty, with a different kind of sweetness than the One and Six. Lots of pears, crunchy orchard fruits. Cinnamon candy. Flaky biscuits with cream. Quite summery in character…
  • Palate – Well, well, well… Not nearly so ‘innocent’ on the palate as the nose teased… There was still lots of candy, and cinnamon however it was joined by a healthy dose of spice, malt, bitter apple, quite warming… and was that a hint of peat? Overall we found it quite chewy and well-rounded
  • Finish – Resin, dried orange peel… a proper finish
  • Water – Don’t mind if I do! This dram easily integrates a splash of cool water – revealing more orchard fruits like peach and apricot

It could be described as contradictory. When we first opened the bottle, Krishna Nakula (Malt Maniac) called it a bit ‘funky’ with an active nose that veered on sour mash.  The kind of whisky one would prefer to have on a wet cold rainy day….

However, just a week later with the Whisky Ladies, we found it had settled down considerably. And rather than be considered a ‘cool weather’ whisky, it held its own in the summer heat. More importantly, did we like it? Absolutely yes! For some, it was a clear ‘win’ – either the favourite or jostling for that position with the peaty ‘Four‘.

This just goes to show, that different stages of oxidation, different environments, mood, and company make all the difference. Tasting progressions are also key! With the Whisky Ladies, the Nine followed the St Kilian One and Six, so our palates were pre-calibrated to something European not Scottish.

What do the folks behind this bottle have to say?

The Signature Edition Nine is an intense, fruity and creamy-sweet taste experience. The melange of exotic fruits harmonises pleasantly with the spicy warmth as well as the sweet and full-bodied flavours.

What more do we know? The cask composition is 11% Oak, 27% ex-Sauternes, 62% ex-Bourbon.

  • AUSSEHEN Leuchtender Bernstein
  • GERUCH Ein betörendes Bouquet von reifer Aprikose und saftigem Pfirsich steht im Einklang mit süßem Toffee und feiner Vanille, begleitet von floralen Noten, dezenter Ingwerschärfe, würziger Eiche sowie einem Hauch Grapefruit.
  • GESCHMACK Ein süßer und vollmundiger Start mit Pfirsich, Ananas und Grapefruit, gefolgt von cremigem Honig, Vanillepudding sowie sahnigem Toffee und getragen von einer wärmenden Eichenwürze mit Ingwer und etwas Zimt.
  • NACHKLANG Lang und cremig-warm mit Karamell und süßem Mandelgebäck, dazu etwas frisch geriebene Grapefruitschale mit einer Spur Walnuss.

A rough google supported translation:

  • Nose – A beguiling bouquet of ripe apricots and juicy peaches is in harmony with sweet toffee and fine vanilla, accompanied by floral notes, subtle ginger sharpness, spicy oak, and a hint of grapefruit.
  • Palate – A sweet and full-bodied start with peach, pineapple, and grapefruit followed by creamy honey, custard, and toffee and carried by a warming Oak spice with ginger and some cinnamon.
  • FinishLong and creamy – warm with caramel and sweet almond biscuits, with some freshly grated grapefruit zest and a hint of walnut.

Arran Cask Finishes – Arran Port Cask Finish 50%

Last in our evening of Arran “finishes” was the Port Cask Finish, which followed the Arran Sauternes, Amarone and Sherry.

Years ago this Port finish was my first introduction to Arran, courtesy of purchase by an actuarial friend (on condition I could reimburse!) who was in Edinburgh. I recently came across the faded receipt for £45 from Stirling Whisky Shop, near Stirling Castle… It meant so much more given I’ve now both been to that very shop and the distillery!

Today in 2022, it no longer is part of their core range… Which is a pity. While it may not be for everyone, I remembered the Port Cask Finish as a rich intense whisky that stands proud at 50% yet also works with a dash of water.

So what did we think?

Arran Port Cask Finish 50%  

  • Nose – Heavy and intense – prunes, dark rich wood, then shifted to be intensely floral, rose, vanilla, then deep forest, even some slightly sour black cherries
  • Palate – Full-bodied, tobacco, a nice spice – think more of garam masala than sweet spices alone
  • Finish – Dry, very long, with more of that light spice
  • Water –  Just a dash opens it up nicely – after the extra kick of spice subsides, it makes this more approachable, dry to ripe fruits, yet still nicely robust

This whisky was full of dark heavy elements – from the dark fruit aromas to the tobacco… there is something that makes you ‘picker up’ with this one. It also paired rather well with a Cigar,

I’ve revisited this one a couple times – it’s more intense and flavourful than I prefer for a “daily dram”.

What do the folks at Arran have to say?

A fantastic choice at any time, particularly as an after dinner dram, especially with a delicious cheese selection.

After initially maturing in traditional oak casks for approximately 8 years, The Arran Single Malt in this bottling was finished in a selection of Port casks sourced from an artisan producer of this iconic Portuguese fortified wine.

The maturation process was monitored under the watchful eye of our Master Distiller, to ensure that the Port casks and the intrinsic character of The Arran Single Malt partnered with each other perfectly. The end result is a combination that’s full of charm and rich flavour, and a wonderful way to discover more about the Arran range of Single Malts.

Official distillery tasting notes:

  • Nose – Cinnamon, baked apples
  • Palate – Vanilla spice, ripe citrus & dried fruits and nuttiness. With a splash of water more depth of mandarin citrus with fudge and honeyed notes.
  • Finish – Spice, Bitter orange, Chocolate, Cherries.

Whilst all from this finishes series are no age statements, there was no doubt that they are well-thought-out expressions that are worthy of attention.

Arran Cask Finishes – Amarone 50%

Oh the beautiful Arran Amarone Cask Finish… we fell in love with you back in September 2017 during a delightful Sunday sundowner… I had such fond memories I feared trying again and being disappointed.

Back in 2017, there was an announcement that the Amarone would be back soon…. it was… but then next it wasn’t, and currently, there is no update on if and when it will return… much like some of the other cask finishes like Sauternes.

However for that fine evening in early January 2022, here is what we thought of the Amarone…

Arran Amarone Cask Finish 50%

  • Colour – A lovely bright pink rose blush
  • Nose – Fresh and fruity! Raisins then red fruits… ripe raspberries and cream, sour plum and cherries… then shifted back to raspberries but this time Rogers raspberry cream soda! Then back to cherries again… and then the slightly tart cranberry…. back to raspberries… simply yum!
  • Palate – Silky smooth… tempting and teasing like Turkish delight, fruit and berry sweet, slightly gingery with a touch of pink peppercorns
  • Finish – Slightly spicy, rich, and satisfying
  • Water – Does it need it? Nope! But if you feel like adding a wee splash… it greedily marries it with the whisky to become even fruitier

Did it stand up to my romanticized notion of this whisky? It did indeed… It is like a decadent dessert, yet not cloyingly sweet. A perfect balance of its different elements, harmonious from its intoxicating aromas to captivating taste which carries through in a lingering finish.

What do the folks at Lochranza distillery have to say about their “Out of Stock” Amarone finish?

Our Arran Amarone Cask Finish is the perfect partnership of rich, red wine and our iconic Arran Single Malt taste.

After initially maturing in traditional oak casks over a number of years, The Arran Single Malt in this bottling was ‘finished’ in a selection of Amarone wine casks. The wine casks used in this bottling were sourced from an artisan producer of Amarone wine in the Veneto region of Italy.

A luxurious Italian wine meets a complex and vibrant Scottish character – there is a lot to love and appreciate about this Single Malt and you will enjoy every dram.

And the official tasting notes?

  • Nose – Cherry, turkish delight, chocolate
  • Taste – Poached pears, touch of cranberry and honey
  • Finish – Sweetness, Pears, Turkish Delight, Cherries, Dark chocolate
